Ingredients

  1. 1 cup mild salsa
  2. 1/2 cup shortening
  3. 2 cups Shawnee Best all-purpose flour
  4. 1 1/3 cups sugar
  5. 4 teaspoons baking powder
  6. 1 teaspoon baking soda
  7. 3/4 teaspoon cinnamon
  8. 1/2 teaspoon ground cloves
  9. 1/2 teaspoon ground allspice
  10. 2 large eggs
  11. 1/3 cup water
  12. 4 cups powdered sugar, sifted
  13. 8 ounces cream cheese
  14. 1 1/2 teaspoons vanilla
  15. 2 tablespoons butter, softened

This quick and tasty recipe can be cooked with a Bundt pan, bread pan, or a simple sheet cake pan. Top with icing to make it sweet and spicy!

Directions

  1. Preheat oven to 350°F and flour two 8-inch round cake pans.
  2. Beat together shortening and salsa in large mixing bowl. Add dry ingredients and beat for three minutes on medium speed. Add eggs and water; beat for another three minutes at medium speed.
  3. Pour into cake pans and bake 25 to 30 minutes.
  4. While cake is baking, mix together icing ingredients (powdered sugar, cream cheese, vanilla and butter) in a medium bowl. Beat until creamy.
  5. Allow cake to cool 10 minutes before removing pans. Let cool completely on rack. Assemble and frost.
