apple pie bars

Ingredients

  1. SHORTBREAD CRUST:
  2. 3/4 C Softened Butter
  3. 1/4 C Granulated sugar
  4. 1 1/4 C Shawnee Best All Purpose Flour
  5. 1/8 tsp Salt
  6. APPLE FILLING:
  7. 3 C Finely chopped apple (2-3 medium apples)
  8. 2 T Shawnee Best All Purpose Flour
  9. 2 T Brown sugar
  10. 2 tsp Cinnamon
  11. 1 Pinch Nutmeg
  12. STREUSEL TOPPING:
  13. 1 C Shawnee Best All Purpose Flour
  14. 1/3 C Brown sugar
  15. 1/3 C Cold butter, cubed
  16. 1/2 tsp Cinnamon
  17. 1/4 C Walnutes, coarsely chopped
  18. 1/4 C Quick oats

Everyone loves these apple pie bars, with their rich shortbread crust, scrumptious apple pie filling and streusel topping, the perfect way to serve apple pie to a crowd!

  1. Pre-heat oven to 325* lightly grease and flour an 8 inch square baking pan, set aside.
  2. Shortbread crust.
  3. In a medium bowl, sift or whisk together the flour and salt.
  4. In larger mixing bowl, using a hand mixer, cream sugar and butter until well combined.
  5. Add flour mixture and stir until makes a stiff dough.
  6. Spread in prepared 8″ pan, bake crust for 5 or 6 minutes.
  7. Prepare apple filling:
  8. In medium bowl mix apples, flour, cinnamon and nutmeg.
  9. Remove pan from oven, turn up oven temperature to 350*
  10. Spread apple filling over crust, set aside.
  11. Streusel Topping:
  12. In a medium bowl mix together the flour, oats,brown sugar and cinnamon, using a pastry cutter, two knives or even your fingers cut in the cold butter until you have coarse crumbs the size of a small pea.
  13. Fold in chopped walnuts. Sprinkle evenly over top of apples, return pan to oven for 35 minutes or until lightly brown and bubbly.
  14. Tip: If the top starts to brown too much, then cover with foil and continue to bake until apples are tender.
  15. Optional: Serve with fresh whipped cream or vanilla ice cream.
