Strawberry White Chocolate Chip Cookies

Ingredients

  1. 2 1/4 C Shawnee Milling All Purpose Flour
  2. 1 tsp Baking soda
  3. 1 tsp Salt
  4. 1 C (or 2 sticks) Butter, softened
  5. 3/4 C Granulated sugar
  6. 3/4 C Packed brown sugar
  7. 1 tsp Vanilla extract
  8. 2 Large eggs
  9. 2 C White chocolate chips
  10. 1/2 C Strawberries, finely chopped
  11. OPTIONAL: A few drops of red food coloring if you want them extra pink

Pretty in pink Strawberry cookies, a lovely cookie studded with white chocolate chips and full of fresh strawberries, the taste of spring!

  1. Preheat oven to 375°F (190°C). 
  2. Line two baking pans with parchment paper.
  3. Beat butter, sugars and vanilla extract in large mixer bowl until creamy.
  4. Add eggs, one at a time, beating well after each addition.
  5. In separate bowl combine flour, salt, baking soda, whisk until combined.
  6. Slowly add flour mixture to creamed sugar/butter mixture until combined.
  7. Gently stir in white chocolate chips, chopped strawberries and food coloring if using.
  8. Drop by rounded teaspoons, 2 inches apart onto lined baking sheets.
  9. Bake for 8-11 minutes until just lightly brown edges. Remove from oven, allow cookies to rest about two minutes then remove to wire racks to completely cool.
