Easy-to-Bake Cherry Cake & Cream Cheese Icing

Ingredients

  1. 1/2 cup buttermilk
  2. 2 cups Shawnee Best all-purpose flour
  3. 1/2 teaspoon allspice, ground
  4. 1/2 teaspoon cloves, ground
  5. 1 teaspoon salt
  6. 1 1/2 sticks butter, unsalted
  7. 1 1/2 cups sugar
  8. 3 large eggs
  9. 15 ounce can pitted dark sweet cherries, drained and chopped, discard the juice

This cake is moist and simply cherry-licious. Great for a party or just because.

Directions

  1. Preheat oven to 350°F and grease a 9×13 baking pan.
  2. Stir the baking soda into the buttermilk and set aside.
  3. Whisk together the flour, allspice, cloves and salt; set aside.
  4. Cream the butter and sugar until light and fluffy (about 3-4 minutes, depending on mixer speed)
  5. Add eggs one at a time, mixing briefly on low speed after each one. Add the buttermilk and stir until incorporated.
  6. Combine the dry ingredients with the liquid ingredients and mix until blended. Fold in the cherries.
  7. Spoon the batter into the pan and smooth into the corners and on top. Bake for 35-40 minutes or until a toothpick inserted in the middle comes out clean.
