cherry hand pie recipe

Ingredients

  1. 1 C black cherries (whole)
  2. 1/2 C black cherries (roughly chopped)
  3. 1 C tart red cherries (whole)
  4. 1/2 C tart red cherries (roughly chopped)
  5. 1/2 C + 1 T sugar
  6. 1/4 tsp cornstarch
  7. 1/4 tsp + 1/2 tsp salt
  8. 1 lime
  9. 1/2 lemon (squeezed for juice)
  10. 1/4 tsp cinnamon
  11. 1/8 tsp allspice
  12. 2 1/2 C + 2 T Shawnee Best All-Purpose Flour
  13. 1 tsp baking powder
  14. 4 T butter
  15. 1 T shortening
  16. 9 T water
  17. 1 egg
  18. 48 fl oz vegetable oil
  19. 3 T dairy (or almond) milk
  20. 1/2 tsp vanilla extract

These little handheld treats are fun to eat. The sweet breading on the outside serves as a comforting sleeping bag for the rich cherry filling on the inside. Perfect for on the go snacking.

Directions

  1. Pour vegetable oil into the fryer and set the temperature to 350°
  2. Remove seeds from cherries.
  3. In a large saucepan, add all of the black and red cherries, 1/2 C sugar, cornstarch, ¼ tsp salt, zest of a small lime, squeeze juice from ½ lime, squeezed juice from ½ lemon, ¼ tsp cinnamon, and ⅛ tsp allspice 
  4. Setting the temperature to low and simmering for 20 minutes or until reduced cherries thicken 
  5. Using a food processor, add 2 ½ C Shawnee Best All-Purpose Flour, baking powder, 1 T sugar, ½ tsp salt, and blend until combined 
  6. Add butter and shortening and blend for 15 seconds 
  7. Add water and pulse until dough forms 
  8. On plastic wrap, knead dough for 5 minutes, form into a disc, wrap and place into the fridge for 2 hours 
  9. Remove plastic wrap from dough, and cut circle into 5 even pieces
  10. Form each piece into a ball and return to the fridge for 30 minutes 
  11. Roll out each ball into a 7-inch circle 
  12. In a small bowl, crack one egg, whisk, and set aside 
  13. Making sure cherry filling has cooled, add 3 T of filling to the middle of each dough circle
  14. Brush the whisked egg around the perimeter of the dough circle 
  15. Fold into a crescent and pinch the hand pie closed 
  16.  Place 2 pies into the fryer for 2 to 3 minutes on both sides 
  17. Remove pies from the hot oil and place on a paper towel 
  18. In a small bowl, whisk confectioners sugar, vanilla, and milk until combined and pour over pies
