These little handheld treats are fun to eat. The sweet breading on the outside serves as a comforting sleeping bag for the rich cherry filling on the inside. Perfect for on the go snacking.
Directions
- Pour vegetable oil into the fryer and set the temperature to 350°
- Remove seeds from cherries.
- In a large saucepan, add all of the black and red cherries, 1/2 C sugar, cornstarch, ¼ tsp salt, zest of a small lime, squeeze juice from ½ lime, squeezed juice from ½ lemon, ¼ tsp cinnamon, and ⅛ tsp allspice
- Setting the temperature to low and simmering for 20 minutes or until reduced cherries thicken
- Using a food processor, add 2 ½ C Shawnee Best All-Purpose Flour, baking powder, 1 T sugar, ½ tsp salt, and blend until combined
- Add butter and shortening and blend for 15 seconds
- Add water and pulse until dough forms
- On plastic wrap, knead dough for 5 minutes, form into a disc, wrap and place into the fridge for 2 hours
- Remove plastic wrap from dough, and cut circle into 5 even pieces
- Form each piece into a ball and return to the fridge for 30 minutes
- Roll out each ball into a 7-inch circle
- In a small bowl, crack one egg, whisk, and set aside
- Making sure cherry filling has cooled, add 3 T of filling to the middle of each dough circle
- Brush the whisked egg around the perimeter of the dough circle
- Fold into a crescent and pinch the hand pie closed
- Place 2 pies into the fryer for 2 to 3 minutes on both sides
- Remove pies from the hot oil and place on a paper towel
- In a small bowl, whisk confectioners sugar, vanilla, and milk until combined and pour over pies
