Our homestead cornmeal muffins are a perfect complement to any main entree. Try them with our On The Range Beef Stew recipe.
Directions
- Preheat oven to 400°F.
- In a medium bowl, thoroughly mix together cornmeal, flour and baking powder.
- Blend oil, egg, and milk together and add the dry ingredients.
- Stir until dry ingredients are just moistened.
- Fill greased muffin pan 2/3 full and bake 20-30 minutes.
Variations: Add 1 cup grated cheese or 1/3 cup finely chopped onion to muffin batter.
