A great breakfast treat! Waffling your leftover mashed potatoes will give them a second life that may be even better than by themselves.
Directions
- In a large bowl, combine the flour, sugar, baking powder and salt.
- In another bowl, whisk the eggs, mashed potatoes, milk and oil. Stir into dry ingredients just until moistened. Fold in onion and bacon.
- Bake in preheated waffle iron according to manufacturer’s directions until golden brown. Serve with syrup or applesauce. Sprinkle with additional bacon if desired.
