Homestead Cornmeal Muffins

Our homestead cornmeal muffins are a perfect complement to any main entree. Try them with our On The Range Beef Stew recipe.

1/3 cup Shawnee Best yellow corn meal

¾ cup Shawnee Best all-purpose flour

½ cup sugar

¾ teaspoon salt

2 teaspoon baking powder

3 Tablespoon vegetable oil

1 egg

½ cup milk


  1. Preheat oven to 400°F.
  2. In a medium bowl, thoroughly mix together cornmeal, flour and baking powder.
  3. Blend oil, egg, and milk together and add the dry ingredients.
  4. Stir until dry ingredients are just moistened.
  5. Fill greased muffin pan 2/3 full and bake 20-30 minutes.

Variations: Add 1 cup grated cheese or 1/3 cup finely chopped onion to muffin batter.
