Ingredients

  1. 1 cup Shawnee Best All-Purpose Flour
  2. 2 tablespoons Sugar
  3. 2 teaspoons Baking Powder
  4. ½ teaspoon Salt
  5. 2 Eggs
  6. 1 ½ cups Mashed Potatoes (with added milk and butter)
  7. 1 cup 2% Milk
  8. 5 tablespoons Canola Oil
  9. ¼ cup Finely-Chopped Onion
  10. 3 Bacon Strips, cooked and crumbled
  11. Maple Syrup or Chunky Applesauce
  12. Additional Crumbled, Cooked Bacon, optional

A great breakfast treat! Waffling your leftover mashed potatoes will give them a second life that may be even better than by themselves.

Directions

  1. In a large bowl, combine the flour, sugar, baking powder and salt.
  2. In another bowl, whisk the eggs, mashed potatoes, milk and oil. Stir into dry ingredients just until moistened. Fold in onion and bacon.
  3. Bake in preheated waffle iron according to manufacturer’s directions until golden brown. Serve with syrup or applesauce. Sprinkle with additional bacon if desired.
